Gimme Dat Bacon




I spent the large majority of my childhood essentially vegetarian.  Because of this, the first time I tasted the GLORY that is bacon was when I was about 18.  No seriously, eighteen.  Obviously bacon is the reason God created life, so since then I've been making up for lost time. When I saw "praline bacon" on the Good Eats episode about salt ("The Ballad of Salty and Sweet" 2010) I knew I just had to try it.  The results were spectacular and I single handedly ate 4 pieces.  I probably would have eaten more, but one of my roommates came into the kitchen and for some reason it feels...weird...to inhale strips of pure fat and sugar like its your job with someone watching.




Praline Bacon
1 lb Thick Cut Bacon
2.5 oz light brown sugar (about 6 tbsp)
1.5 oz pecan halves

1) Heat the oven to 400
2) Line a half sheet pan with aluminum foil and place a cooling rack on top
3) Arrange bacon evenly on the cooling rack
4) Bake 30-35 minutes or until the bacon browns and the fat is rendered and bubbly
5) While the bacon is browning, combine the brown sugar and pecans in a food processor and pulse about 15 times until the pecans are chopped
6) As you remove the bacon from the oven, sprinkle the brown sugar/pecan mixture over the bacon, patting slightly to it adheres
7) Return to the oven for an additional 10 minutes or until the bacon is crisp
8) Let the bacon sit for 10 minutes to cool, and serve
